Arugula, Corn & Pistachio Salad
4 big handfuls of Fresh Wild Arugula
1 cup fresh corn kernals
1 small red bell pepper, sliced
3/4 cup chopped purple cabbage
1 package Spicy Chipotle Pistachios
1/2 cup olive oil
juice of 1-2 limes
1 fresh jalapeno, de-seeded and minced
2 cloves garlic
1/2 teaspoon cumin
salt and pepper to taste
Garnish with fresh cilantro.
Toss all together. Enjoy!
