Superfoods are the category where kosher certification least resembles what the applicant expects. The review is usually long, and it usually starts with a question the applicant cannot answer: what is this powder? Two bags labelled “açaí powder” can be whole fruit dried and milled, or juice spray-dried onto maltodextrin, and a third can be a standardized extract. Nothing downstream can be decided until that is settled — whether the material carries an insect-inspection obligation, whether it carries a carrier with its own status, whether it is pareve. The specification sheet, not the product name, is where the answer lives.

01What makes superfoods different from a kosher standpoint?

Superfoods are a marketing category rather than a manufacturing one, which is exactly why they are difficult. There is no single process to evaluate. Behind one label sit a harvester, a broker, a spray dryer in one country, a mill in another, and a toll blender in a third. The raw materials are almost all inherently acceptable. Status gets created downstream.

Each form has a different control point, and knowing which applies to you determines what to gather first.

03How do you tell what a superfood powder actually is?

You tell what a superfood powder actually is from its specification sheet, because the product name almost never settles it. “Beet powder” and “camu camu powder” can each be whole fruit dried and pulverized, freeze-dried fruit milled to a powder, a spray-dried juice carried on maltodextrin, or a standardized extract. This is the first problem in the category and the one everything else depends on, because how the powder was made determines whether it carries an insect-inspection obligation, whether it carries a carrier, and whether it is pareve.

A whole powder is the dried botanical, ground — air dried, drum dried, or freeze dried, and the method matters for reasons taken up below. An extract is the plant pulled apart with a solvent, concentrated to a ratio — 4:1, 10:1 and higher — and often standardized to a stated percentage of a marker compound. Certifying the first mostly means reviewing a plant; certifying the second means reviewing a manufacturing process.

So read the spec sheet for three things: a declared carrier and its percentage, an extract ratio or standardization figure, and a process description naming the drying method — a spray-dried powder had to be sprayed onto something. Applicants routinely submit a fruit powder believing it is just the fruit, because that is what the purchase order said.

Four things enter an extract that never enter a whole powder, and each is reviewed on its own:

  • Extraction solvent or mediumDetailed below; the most common source of hidden status.
  • Drying carrierMaltodextrin, dextrin, or acacia gum, often a large share of the finished weight; a dairy-derived carrier makes the extract a dairy product, and none of it appears on a label reading “organic ashwagandha extract”.
  • Standardization aidWhatever adjusts the marker compound to the stated percentage.
  • Processing aidsFiltration media, adsorbents, and flow agents used along the way.

The solvent deserves separate attention, because it is an ingredient whether or not it survives into the finished powder, and this applies to tinctures as much as to dried extracts. Three routes carry status, and a spec sheet rarely distinguishes them:

  • EthanolMade from whichever sugar or starch source is cheapest where it is produced: cane, corn, wheat, barley, and in some places lactose separated from whey, or wine. Grain-derived ethanol raises questions about the grain, lactose-derived ethanol is dairy, and wine-derived ethanol falls under stam yeinam, the body of law governing grape products handled by a non-Jew — generally not acceptable without measures most producers will not undertake. The sheet says “ethanol”; it does not say which.
  • GlycerinProduced by splitting fats and oils, and also a coproduct of biodiesel manufacture, so it can be animal, vegetable, or petroleum in origin. A source declaration on the actual lot, not a general assurance, is what settles it.
  • Milk extractionSeveral traditional preparations were historically made in milk, and some producers still use it as the extraction medium, ashwagandha being the well-known example. An extract made that way is a dairy product in kosher terms regardless of how the capsule is marketed, and dairy carries supervision requirements a rural extraction site may not be able to meet.

04When does a dried superfood need insect inspection?

A dried superfood needs insect inspection when its raw material is infestation-prone and its processing has not resolved the question — which is why the identification above comes first.

What is tolaim?
Tolaim is the term for insect infestation in kosher law. It governs produce inspection protocols, and where a material is infested a majority of the time the obligation to inspect is treated as biblical rather than rabbinic in origin.

The standards are demanding: sampling before and after washing, examination against a light box, and rejection of an entire lot when a single insect is found.

Superfoods raise it more than most categories. Dried berries are inspected whole and can harbor insects inside the fruit as well as on it. Leafy material carries the aphid and thrip burden of any leafy green, compounded by a category that buys organic almost by default. Whole seeds and pseudocereals moving through long, warm supply chains can carry eggs that hatch in storage, which is why a lot that passed at origin can fail at the repacker months later.

But processing frequently settles it. Mechanical drying, freeze drying, milling, and other steps can act on residual insects such that the finished product is acceptable although the incoming material would not have been. Which processes qualify, at which parameters, is a determination your certifying agency makes on your actual line. This is the question to ask at the outset, because the answer decides whether you are running an inspection program or not.

Where processing does not resolve it, certification becomes a cadence rather than a status. Expect lot-level release on the affected items, expect some lots to fail, and expect the mashgiach — the kosher supervisor assigned to your facility — on a schedule tied to your receiving rather than to an annual calendar. Two products in the same building can land on opposite sides of this, which is why the drying and milling parameters belong in your first submission rather than your second.

05What does freeze drying change?

Freeze drying changes both the infestation question and the equipment question, which is why it is worth understanding as a process rather than as a line on a spec sheet. The material is frozen solid, then held under deep vacuum while the ice sublimes directly to vapour and is captured on a condenser. Almost no liquid water is ever present and the product stays cold throughout — which is the commercial point, since that is what preserves colour and heat-labile actives in berry and juice powders.

Those two facts shape the kosher analysis but do not settle it, because cycles vary more than the description suggests. Where a cycle stays genuinely cold throughout, freeze drying does not give trays, shelves, or chambers absorbed status to pass to the next batch, and the shared-equipment question is residue rather than absorption. But sublimation has to be driven by heat entering the product, and secondary drying is achieved by raising shelf temperature: some cycles take the shelves and product-contact surfaces high enough that absorbed status is in play and the trays and chamber would need kashering. Shelf temperature is therefore not a specification detail. It is the fact that decides which of the two analyses applies to your line.

On infestation, freeze drying removes essentially all of the moisture an insect consists of. Where that suffices to reduce residual insects to a state kosher law disregards, a freeze-dried powder can be acceptable although the incoming fruit would not have been — and for material like goji or mulberry that can be the difference between a lot-by-lot inspection program and none.

06Why does a kosher certificate on collagen need a second look?

A kosher certificate on collagen needs a second look because collagen is the ingredient in this category where acceptance varies most between certifying agencies. Collagen and collagen peptides now turn up well beyond protein powders — in greens blends, creamers, gummies, and coffee whiteners — and unlike most of what this article covers, the difficulty is the material itself rather than the equipment it runs on.

Collagen is hydrolyzed from hide and bone. The mainstream position among certifying agencies is that acceptable collagen has to come from a kosher species, slaughtered and handled accordingly, which makes the qualified supply narrow: a small number of specific producers rather than an open commodity market. Demand is nothing like that narrow, and the gap is where the problem lives. An additional pitfall is that there is collagen certified by specific kosher certification agencies that rely on positions the major agencies do not share and will not accept, so a certificate on collagen is not self-validating the way a certificate on gum arabic is. Your agency will look at who issued it and on what basis, and “our collagen supplier is already certified” is where that conversation begins rather than ends.

Marine collagen from kosher fish species is the route some brands take instead, which moves the question to species identity rather than removing it. Either way, qualify the source before you build a formula around it.

07Why does the toll blender determine your kosher status?

The toll blender determines kosher status because the brand rarely owns a plant. A superfood company buys powders from importers, has them blended and packed by a contract facility, and has capsules filled by a second one. Two of the three sites are not yours, and both run other people’s products on the same equipment.

Botanicals are ground on hammer mills, pin mills, and air classifier mills, screened, and combined in ribbon blenders — and those blenders run whey protein, milk powders, collagen, and animal-derived flavor systems for other clients. It is worth being precise about why that matters, because the mechanism is not the one most people assume. Kosher law transfers status from food to equipment through heat or through prolonged contact with liquid, and a process that stays dry and at ambient temperature does neither. Grinding and dry blending, run that way, do not give a mill absorbed status that it passes to the next run.

What they leave is residue: actual particles of the previous product held in screens, scrapers, dead legs, and dust collection. That is a housekeeping and validation question rather than a kashering question — the rare place where the program you already run is most of the answer, since documented cleanout with swab or protein testing to verify it is the substantive work, and the kosher review largely reads that documentation. Where heat or moisture does enter — spray drying, wet granulation, extraction, or any step that runs the product warm — absorbed status is back in play. As with a freeze dryer, operating temperature rather than equipment category decides which analysis applies.

Dairy is where this lands commercially. Product made on equipment that handled dairy under conditions that transfer status is typically designated DE, for dairy equipment, rather than dairy, and neither designation is pareve — meaning neither meat nor dairy. For a plant-based greens brand, DE removes much of the reason to certify. On a dry blending line the question is whether cleanout supports a pareve claim; on wet or heated equipment it is whether the equipment can be kashered and your run scheduled behind it. The designation is your agency’s determination, and worth settling before you sign the co-packer.

Spray drying and encapsulation add one more. Encapsulated vitamins and oils are often spray-dried into beadlets on a gelatin base that never appears on the label of the product it goes into, and sodium caseinate — a milk protein — is a common carrier that will make a dairy-free-marketed powder kosher-dairy. At the capsule filler, hard shells are either gelatin, hydrolyzed collagen from hides and bones and acceptable depending on species and slaughter which presents the same issue as discussed above regarding collagen, or a vegetarian material such as HPMC or pullulan; tableting lubricants like magnesium stearate and stearic acid are made by splitting fats and may come from tallow or a tropical oil. 08Where do superfood supply chains break down?

Superfood supply chains break down at the trading layer and at species identity. Botanicals reach the market through exporters, brokers, and repackers, so the name on the purchase order is often not the name of the plant that dried, milled, or extracted the material — and a certificate held by a trading company says little about the site that made your lot. What holds up is a current certificate naming the specific item and the actual manufacturer, not a letter of guarantee.

Species identity compounds it: botanical adulteration is a documented commercial risk, which is why serious buyers verify species by chromatographic fingerprinting, and the same uncertainty is a kosher problem because the review was performed on the species you declared. Origin drift is the usual reason a program clean at the first inspection is not clean at the second, since a supplier buying moringa from one country last season may be buying from another this season, from a site not on your approved list.

09What does certification actually look like for a superfood company?

Certification begins with a full ingredient and supplier review to determine which ingredients can be accepted as inherently kosher and which will require a valid kosher certificate. Sometimes this involves further investigation into the botanical source, extraction solvent, carrier, excipient, and production methods. For most applicants this is the longest step.

The facility review depends on whether you own your production. A dedicated operation is straightforward. A brand running through a toll blender and a separate encapsulator should expect to focus on the co-packers’ kosher status, product schedules, ingredient receiving and tracing protocols, and their cleanout documentation and allergen program.

How do I tell whether my fruit powder is an extract?

From the specification sheet, not the product name. A declared carrier and percentage, an extract ratio, or a spray-dried process description all indicate an extract rather than pulverized dried fruit. The two are different submissions, and a whole powder is generally the shorter review.

Does grinding on shared equipment make my powder dairy?

Usually not by itself. Where the process stays dry and at ambient temperature it does not transfer absorbed status, so the question on a mill or dry blender is residual particles of the previous product rather than the equipment’s status, and documented cleanout with allergen verification is what the review looks at. Steps that run the product warm or wet are analyzed differently.

Can a greens powder made at a dairy co-packer be certified pareve?

It depends on which equipment and under what conditions. On dry blending lines the question is whether cleanout supports a pareve claim; where dairy ran under conditions that transfer status, the product is typically designated DE, and neither DE nor dairy is pareve. Settle it before selecting the co-packer.

12Getting started

The through-line of all of this is that superfood certification is process verification, not ingredient approval. The name on the bag rarely settles anything; the specification sheet, the co-packer’s schedule, and the lot history do. Companies that assemble supplier specifications, extraction details, lot information, and co-packer documentation before they apply move through review appreciably faster than companies that assemble them during it.
